The idea of herbal nutrition preventing people from illnesses is becoming more common day by day. As a result of this, the tendency for herbal foods has been increasing. Researches have shown that herbals are able to decrease the possible negative situations in the cells and also can be used to prevent cancer, heart and vascular disorders. In this Project, the tassel of the “Zea mays” (maize) plant and the stem of the plant “Prunus avium” cherry’s -which can also be used as herbal wastes- extracts prepared with methanol and ethyl acetate were used and their bioactive components and antioxidant properties have been examined. Antioxidant activity was determined by determining the DPPH radical scavenging activity in the phenolic substance determination of plant wastes, It is aimed to develop a product with medicinal value. Antioxidant capacity of “Zea mays” herb tassel and “Prunus avium” plant stem were determined by phenolic quantitative analysis and DPPH. Vegetable wastes’, which are easy to obtain and economically favorable, being able to be used in the food industry has made this project different from other current studies. The corn tassel and cherry stalk used in this study were evaluated and it was determined that the herbal wastes of these plants have medicinal value In the study, it was observed that corn tassel and cherry stalk extracts prepared with ethyl acetate also have phenolic components which are accepted as proof that they contain a natural antioxidant substance to corn tassel and cherry stalk extracts prepared with methanol.
